COLD BORSCHT (SOUP)
Without a doubt, this classic cold beet soup can pose a serious competition to more famous Spanish Gazpacho soup. Holodnik is set apart in that it utilises beets as the main ingredient.
Each family has their own version, we’re using my mum’s recipe. Full of super nutritious seasonal veg but the star of the show is locally grown beetroot - sweet earthy and full of goodness. Topped with fresh cucumber, spring onion, more beetroot and dill. Throw in a dollop of sour cream and enjoy this super healthy and tasty cold soup.
Slice of rye bread and sour cream included.
